Speciality: Lobster rice

Chop up the lobster and sear in a pan with the olive oil. Cook a ‘sofrito’ of onion, pepper, courgettes and aubergine. Sauté the rice in the ‘sofrito’, add a previously prepared seafood fumet and add the lobster until the rice is al dente. It is served in an earthenware dish.
