Speciality: Raw albacore zorza’ with ‘potatoe , peppers and egg yolk

Clean the albacore and cure in a mixture of salt and sugar for two hours. The ‘zorza’ is then cut into cubes and seasoned to be served with sesame oil sauce, ‘ajada’, chillies and soya. The potatoes and peppers are fried in cubes and served together with an egg yolk.
