Speciality: Zamburiña XO
The black Queen scallops from Cambados are cooked on the grill or in a frying pan and then an XO sauce is made, which is a spicy Asian sauce that has been converted into a Galician one by adding virgin olive oil, dehydrated seafood, hot chilli, chilli pepper and aged brandy. In Asia, aged brandy is called XO and that is what gives the name to the sauce. It is plated up covering the Queen scallops in the XO sauce.
