Speciality: Sea bass stuffed with scallops on top of a tomato jam

Remove the bones from the sea bass, season with salt and pepper and add a fresh scallop. Prepare a roll with the sea bass and place the scallop in the centre. Cook for 10 minutes in the oven and serve on the plate on top of a tomato jam.
