Speciality: Bean, potato and lobster stew

Prepare a base of onion, garlic, parsley, bay leaf, sweet paprika from La Vera and homemade tomato sauce. When everything is well sautéed, add some potatoes, stir and add the lobster and fish stock. When the lobster is almost ready, add the already cooked beans and allow them rest for 10 minutes so that they imbibe the flavour and then plate up.
