Speciality: Lobster in the Bellavista style
Cook the lobster in seawater with a bay leaf. Once ready, the cut the tail into medallions and place these on the empty body. The legs and head are flaked. Decorate some spoons with its meat, which are arranged on the platter where the dish is served.
