Speciality: Lobster rice

Take a 700g lobster, cut and sear in the paella pan with olive oil. Meanwhile, sauté the rice with red pepper, green pepper, garlic and fresh tomatoes, add saffron and a little fish fumet. Add the lobster and leave to cook for about 12 minutes until the rice is brothy. It is served in the same paella pan in which it has been cooked.
